What You’ll Do

Reporting to the Director of Marketing, the Culinary Operations Manager is analytical with a strong knowledge of industry trends along with demonstrated technical and organizational skills and has several years of experience in the hospitality field. The C.O.M. will lead all operational elements associated with the Food and Beverage programs while maximizing the financial performance in all areas of responsibility.

SYSTEMS AND ANALYTICS:

  • Lead all Culinary reporting requirements including but not limited to; OC Management (FC Projections), POS Matrix for Programming (KDS), Dataminer, POS management, Menu Change impacts – Full Analysis.
  • Support Menu Engineering through Design & New Menu Development.
  • Lead Period Theoretical Food & Beverage Cost reporting
  • Analyze weekly/monthly product/process cost statements & conduct cost reviews.
  • Assisting in root cause analysis and corrective actions as necessary.
  • Maintaining technical competency and remaining current in changes in technology and in the industry.

TRAINING & CULINARY OPERATIONS:

  •  Working with the Executive team to support the development of Department strategies.
  • Executing a plan to deliver the Department Strategywith accuracy and within the parameters of the timelines.
  • Auxiliary Menu Development including but not limited to; (Core and Beverage Menu, Late night, Feature, Local, HTA, Holiday Packages, etc.)
  • Support In-store Menu BETAtesting.
  • Support Menu Creative as it relates to menu design in the following categories: Menu copy writing for Menu descriptions, pricing tiers, calories, sustainable & signature call outs, etc.
  • Developtraining materials for employee and management training with respect to Recipes,Prep Recipes,HOH Tools–build charts, line checks, Allergens, Food Safety Plans,Hazard Analysisand maintenance of all HOH systems and tools.
  • Oversee andmaintain genesis database for all food and beverage items.
  • Lead Presentation Sessionsas it applies to the Culinary Department(Executive & FAC Tastings)
  • Identify and support procurement and operations with Smallware’s & Equipment Requirements
  • Central contact for Flagship and Franchise KM Support –OC Training, Inventory Management, New menu support and operational efficienciesfor any issues relating to F&B, OC, product concerns.
  • Optimizing available resources through capacity planning and continuous improvement to maximize productivity; support and Develop KM’s and HOH Staff on an ongoing basis.
  • Support Purchasing and F&B Product Concerns/ Shortage / Cost Savings.
  • The C.O.M will drive the culinary aptitude throughout through daily validations by conducting audits, side by side development, validation that team members are trained properly and certified in their position.
  • Ensuring facilities remain safe and that the established standard, all equipment,and technology are up to date and compliant with Food Safety Plans including ensuring annual analysis, update-to-date rules,and continued training, as needed.
  • Responsible for regulatory audits as necessary.
  • Completing and maintaining all required paperwork, records, documents, etc.
  • Timely and accurate completion of duties.
  • Travel for work, from up to 40% of the time.

EDUCATION/SPECIALIZED KNOWLEDGE REQUIREMENTS:

  • 5+ years of experience in restaurant operations.
  • Extensive knowledge of Pixel Par, Optimum Control, KDS, Genesis.
  • Extensive knowledge in MS Suite (Excel, PowerPoint, Word)
  • Leadership skills to direct workflow and support a team.
  • Strong attention to detail.
  • Experience in safety operations within food service distribution.
  • Certifications: HACCP, and Food Handling Certification.
  • Excellent verbal and written communication skills required.
  • Ability to prioritize workload for self and team based on business need.
  • Must be able to meet business needs given competing priorities.
